Eggplants for lunch, snack and dinner
I love cooking eggplants and there is so much food I can create with it.
As a french, there first dish will be a ratatouille!!!
Imagine having some roasted eggplants with thymes, eggplant caviar, grilled eggplant, eggplant stuffed with quinoa...
Today, I would like to share a very quick and simple recipe.
EGGPLANT SLICE WITH THYME
PREPARATION AND COOKING
180 degree Celsius for 30 minutes (or less depending of the thickness of the eggplants)
One large eggplant
Set your oven to 180-200 degree Celsius
Clean the eggplant (I like to eat eat with greener cleaner)
Cut the eggplant in half in length way and cut into thin slices (see picture below)
Place them on a wet baking paper (wet is much better than dry, it will keep the eggplant moist)
Add some fresh thyme on top and drizzle some olive oil all over
Set a timer for 20 minutes and if need be, you can add another 10 minutes.
The cooking time can be variable as per your oven and the thickness of your eggplant.
Set aside to cool down if you want to use them later on or eat them as part of an antipasto dish.
